So this is another one of my recipes that got created by a God idea. I really wanted something cold and healthy for my daughter to eat when she woke up from her nap and after prayer here's the recipe we came up with.
Prep time: 10 minutes.
Freeze time: 15 hours
2 C. frozen pineapple
1 C. yogurt (Brown Cow with the Cream top is my favorite).
1/2 C. dried unsweetened coconut
1 banana
1 tsp. vanilla extract
1 1/2 -2 C. Sweetened Coconut Milk (I buy it in the dairy alternative section, next to the soy milk).
Dump all of it in a blender. Blend till smooth. Poor into molds and freeze 15 hours.
